MONTE SÃO SEBASTIÃO WHITE RESERVA
Winemaking: The winemaking took place during the first week until the end of September. The maturation control was carried out during the month of August.
Freshly harvested grapes are immediately processed, thereby inhibiting high phenolic extraction.
The grapes are harvested by hand and arrive at the cellar in boxes of 20 kg.
The vinification took place in stainless steel vats at a temperature of 14ºC to 18ºC, in order to maintain the primary fruit aromas and preserve them from the amylic aromas of low temperature fermentation. The wine passed for a period of 6 months in French oak barrels (2nd year of wine use). Subsequently, it was aged in bottle for a period of 3 months.
Varieties: Monte São Sebastião Reserva Branco, is the result of a 26-year-old vineyard where the Rabigato grape variety is planted.
