After the arrival of the grapes at the winery, a manual selection is made. O Grape crushing is delicate, and remains for 12 hours in skin maceration at a temperature of 12ºC.
The must ferments for 25 days in a stainless steel tank at one temperature of 16ºC. After the alcoholic fermentation is completed transferred to new French and American oak barrels from different types of toast and grain size, where it remains for 6 months. Bottled after this period, it ages for one year in bottle.
Varieties: Viosinho, Gouveio and Rabigato.
